Ginger loaf cake with rum caramel

As Christmas is just around the corner, nothing seems more well-suited than a scrumptious spiced ginger loaf cake
- For the cake:
- 190 gr (1 1/2 cups) all purpose flour
- 1tbsp ground ginger
- 1tsp cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground allspice
- 1tsp salt
- 1/2 tsp baking soda
- 120 ml (1/2 cup) buttermilk
- 2 tsp vanilla essence
- 115 gr (8 tbsp) butter
- 200 gr (1 cup) tightly packed brown sugar
- 230 ml (1 cup) molasses
- 2 large eggs
- For the rum caramel:
- 80 ml water
- 250 gr golden caster sugar
- 120 ml double cream
- 25 gr (1 tbsp) butter
- a good pinch of salt
- 1 tbsp spiced rum (you can also use bourbon or scotch)
Blueberry pancakes

A perfect breakfast for a Saturday morning!
- For the pancakes
- 3 eggs
- 125 gr plain flour
- 60 ml full fat milk
- 50 gr melted butter
- 2 tsp baking powder
- 1 tbsp powdered sugar
- a handful of blueberries lightly crushed with a fork
- grounded hazelnuts (optional/ to taste)
- For the raw blueberry jam
- 150 gr blueberries
- 1 heaped tbsp tightly packed brown sugar
- zest of a lime
Chocolate mousse cake

Super easy indulgent dessert
- 200 gr grounded chocolate biscuits (I used bourbons)
- 75 gr melted butter
- some spices like cinnamon and nutmeg
- 375 gr good quality dark chocolate
- 500 ml double cream
- almonds to garnish
Butternut squash mash with onion and jam

A lush side dish. Butternut squash mash with onion and pepper jam
- For the mash
- 1 medium butternut squash
- 70 gr butter
- 1-2 tbsp milk
- goats cheese
- For the jam
- 3 big red onions
- 2 red peppers
- 1 green chilli
- 50 ml sherry
- 100 gr brown sugar
- 2 rosemary sticks
- 2 tbsp olive oil
Cottage pie with a twist

A modern take on the classic cottage pie
- 500 gr lean minced beef
- 1 red onion
- 1 big carrot
- 2 heaped tbsp tomato paste
- 1 beef stock cube
- 70 ml white rum
- 70 ml dry white wine
- salt – pepper – oregano
- olive oil (to cover a large pan)
- 1 big potato
- butter
Festive French toast

- Bread (I prefer thick slices)
- eggs (1 for each slice of bread)
- milk (1 tbsp for each egg)
- 2 tbsp brandy cream ( I used this portion for 3 slices of bread)
- Greek yogurt
- vanilla sugar
- honey
Chestnut, onions, fennel chutney

An aromatic chutney that compliments cheese and wine
- 400 gr (raw) chestnuts
- 3 bid red onions
- 2 big fennels
- 120ml white wine vinegar
- 120 ml brandy
- 100 gr fine brown sugar
- 80 ml olive oil
Apple loaf cake with caramel sauce

A Christmas spiced apple-caramel cake, perfect for breakfast on Christmas day
- 175 gr butter in room temperature
- 175 gr caster sugar
- 1 tsp vanilla extract
- 2 eggs
- 225 gr self raising flour
- 1/2 tsp cinnamon
- 4 tbsp yogurt
- 2 Granny Smith apples
- 100 ml toffee sauce
- 1 tbsp double cream
- dried cranberries and pecans to decorate
Brownie Cookies

- 60 gr butter (slightly salted)
- 200 gr dark chocolate
- 2 eggs
- 160 gr caster sugar
- 1 tsp almond extract
- 1 tsp baking powder
- 185 gr flour
- grounded walnuts (optional)
- icing sugar

Greek traditional syrop-y Christmas biscuits
- For the biscuits:
- 900gr plain flour
- 200gr caster sugar
- 240gr olive oil
- 240gr vegetable oil
- 160gr orange juice (fresh)
- 50 gr sherry
- 1tsp bicarb. soda
- 2 tsp baking powder
- 1 tsp grounded cloves
- 2 tsp cinnamon
- zest from 2 oranges
- For the syrup:
- 400gr caster sugar
- 400gr honey
- 400 gr water
- zest from 1/2 lemon
- grounded walnuts (to serve)
