Apple loaf cake with caramel sauce

A Christmas spiced apple-caramel cake, perfect for breakfast on Christmas day.

Ingredients
- 175 gr butter in room temperature
- 175 gr caster sugar
- 1 tsp vanilla extract
- 2 eggs
- 225 gr self raising flour
- 1/2 tsp cinnamon
- 4 tbsp yogurt
- 2 Granny Smith apples
- 100 ml toffee sauce
- 1 tbsp double cream
- dried cranberries and pecans to decorate

Preparation
Step 1
Beat together butter, sugar and vanilla for about 3 minutes. Add the eggs one at a time while beating. Shift the flour, cinnamon and mix till well incorporated. Stir in the yogurt. Peel the apples, grate them and stir them in the mixture.
Step 2
You can make a big loaf cake or small ones. I chose small ones because they were meant to be gifts.
If you choose to make one big loaf, bake at 160C for 1 hour 20 minutes or 50 minutes if you choose the mini loafs option.
Step 3
In a pan over medium heat, melt the toffee sauce and add the double cream. Let it simmer for a couple of minutes, let aside for 1 minute to set and pour on the cake. Top with walnuts and dried cranberries.
