Ingredients

  • For the pancakes
  • 3 eggs
  • 125 gr plain flour
  • 60 ml full fat milk
  • 50 gr melted butter
  • 2 tsp baking powder
  • 1 tbsp powdered sugar
  • a handful of blueberries lightly crushed with a fork
  • grounded hazelnuts (optional/ to taste)
  • For the raw blueberry jam
  • 150 gr blueberries
  • 1 heaped tbsp tightly packed brown sugar
  • zest of a lime

Preparation

Step 1

Mix eggs, milk, butter and flour to a creamy dough. Add the sugar and baking powder and keep mixing for another 30 sec. Finally add the blueberries and ground hazelnuts.

Step 2

Add all the ingredients for the jam in a blender and mix for about 2-3 minutes.

Step 3

Heat a pan and melt a small portion of butter to cover the bottom. Once the butter is melted and the pan really hot pour a portion of the batter. You will see the batter rising slightly, leave for a 3 minutes and flip carefully.

Step 4

Serve while they are still warm, with a dollop of yogurt, the jam and some fresh blueberries!
