Asian-steamed sea bass

Score the sea bass on both sides at 2cm intervals, cutting roughly 1cm deep, then place into the steamer tray
- 1 x 1.5 kg whole sea bass, scaled, gutted and gills removed (ask your fishmonger to do this for you)
- sea salt
- 5 spring onions, trimmed and finely sliced
- 1 fresh red chilli, finely sliced
- a thumb-sized piece of fresh ginger, peeled and finely chopped
- a large bunch of fresh coriander, leaves roughly chopped, stalks finely sliced
- 1 lime
- low-salt soy sauce
- sesame oil

Ask the fishmonger to prepare your sea bass and cut the fillets in half
- For 4 people:
- 1.2 kg fresh sea bass
- 1 carrot
- 2 shallots
- 10 g fresh ginger
- 1 clove of garlic
- 1 tomato
- One half lemon
- Thyme, parsley
- 100 ml dry white wine
- 250 ml fish stock
- 3 chicory
- 1 teaspoon anise seeds
- olive oil
- butter
- salt and pepper
- Optional: bacon, anise seeds

Cook the potatoes with the skin about 15 minutes
- 4 filets sea bass with skin
- 500g sweet potatoes
- 1 clove of garlic
- 150g tomatoes, skin removed, cut into cubes
- 5 sweet basil leaves (or Thai)
