Goat's cheese salad with Strawberries

Lovely fresh Summer Salad - great for the barbeque. For maximum flavour use organic ingredients and assemble salad as close as possible to time before serving. Strawberries have a better flavour if not refrigerated. Serve as starter or side dish.

Ingredients

  • Strawberries - 2 small or 1 large punnet
  • 1 cucumber
  • 100g soft goat's cheese
  • 1 small red onion, finely sliced or chopped
  • Handful fresh basil (red basil Juice of 1 lemon
  • 2 tablsps olive oil
  • 1 tablsp runny honey
  • if available)
  • Sprinkling of freshly ground black pepper
  • BALSAMIC DRESSING:
  • 200mls. balsamic vinegar
  • few sprigs rosemary
  • 1 tablsp honey
  • 2 tablsps olive oil

Preparation

Step 1

For the dressing: Infuse the rosemary in balsamic vinegar overnight. Next day remove rosemary & stir or shake all dressing ingreds. together

Step 2

Halve strawberries. Chop cucumber into cubes. Crumble goat's cheese. Chop onion finely. Tear basil leaves to size required.

Step 3

As close as possible to serving time, toss halved strawberries with all remaining ingreds.

Step 4

Gently mix all ingreds. in salad bowl & pour dressing over or serve dressing on the side.
