- 2lb steak cut into 1 inch cubes
- 1 onion chopped
- 3 garlic cloves
- 1 inch ginger grated
- 4 fresh red chillies
- 4 green cardamom poods
- 4 cloves
- 2 tsp coriander seeds
- 2tsp cumin seeds
- 1 tsp paprika
- 1 tsp salt
- 1 dried bay leaf
- 4 fl oz yogurt
- 1 inch piece of cinnamon
- 1/4 tsp garam masala

Preparation
Step 1
Brown Meat in batches. Add the onion heat for 3-4 mintues. Grind together the spices. Add the paste to the casserole with bay leaf and stir.
Step 2
Return Meat and any juices in the bowl to the casserole and simmer for 2-3 min. Gradually stir the yogurt into the casserole so that the sauce keeps simmering. Stir in cinnamon and hot water, and pepper to taste.
Step 3
Cover and cook in a preheated oven at 350F for 1.25 hours, stirring frequently, until the meat is very tender and the sauce is slightly reduced. Discard the cinnamon and stir in garam masala. Remove surplus oil from the surface of the casserole before serving.
