Ingredients

  • 1 Onion
  • Mushrooms
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • Garlic
  • 1 tin of garden peas (or fresh or frozen will do)
  • 1 tin of chopped tomatoes
  • Olives
  • 1 carton of passata
  • 1 tbsp Italian herbs
  • 1 stock cube
  • 1 pack of fish

Preparation

Step 1

Cut up your onion, mushrooms, bell peppers, garlic, olives and add to the pan (I use a large frying pan), cook off for a couple of minutes.

Step 2

Add the can of peas complete with fluid, the tin of chopped tomatoes, passata, stock cubes and herbs and stir.

Step 3

Cut the fish into chunks and add to the pan. Leave to simmer until the fish is cooked through - it should be opaque.

Step 4

Serve with rice or couscous and enjoy.
