Chicken Breast Supreme

Ingredients
- 4 chicken breasts, boneless & skinless
- flour
- heavy cream
- salt & pepper
- 4 thin slices of ham
- 4 pieces of toast, buttered
- Supreme sauce:
- 2 tbsp butter
- 2 tbsp flour
- 1 C hot chicken stock
- 1/2 C heavy cream
- pinch of salt
- pinch of nutmeg
- 1 egg yolk, slightly beaten

Preparation
Step 1
Sprinkle salt and pepper on chicken breasts, dip in heavy cream, and dredge in flour.
Step 2
Fry breasts until lightly browned. Place ham slice on buttered toast, and place cooked chicken on top.
Step 3
Prepare sauce: melt butter in pan that was used for cooking chicken, add flour, and stir until blended.
Step 4
Pour chicken stock and heavy cream into roux, stirring constantly while bringing to a boil. Season with salt and nutmeg.
Step 5
Add egg yolk to sauce and stir.
Step 6
Strain sauce, and pour over chicken breasts.
