Ingredients
- 300g flour
- 20g yeast
- 125ml lukewarm milk
- 80g butter
- 1tsp salt
- 1.5kg onions
- 100g Speck
- 125ml sour cream
- 4 eggs
- pinch of salt
- 1tbsp caraway seeds (if you like the taste... I don’t)

Preparation
Step 1
Sieve the flour into a large mixing bowl. Create a hole in the centre of the flour and add the yeast and the milk, then mix together with a little of the flour.
Cover with a clean tea towel and leave to rise for 15 minutes.
Step 2
Melt the butter and add it along with the salt to the mixing bowl. Mix until the dough starts to show air bubbles. Cover again and leave to rise for a further 15 minutes.
Step 3
Peel the onions and either slice them into rings or grate them.
Step 4
Cut the Speck into cubes and briefly fry in a pan with a little oil. Add the onions to the pan and fry until they turn transparent.
Step 5
Roll out the dough on a surface dusted with a little flour and place onto a lightly greased baking tray.
Step 6
In a clean bowl, whisk together the sour cream, eggs and the pinch of salt (and the caraway seeds). Then stir in the Speck and onions. Spread this mixture onto the dough.
Step 7
Allow the cake to rise for a final time (15 minutes).
Step 8
Bake the cake for 45 minutes in an oven pre-heated at 200°C. Serve hot.
