Ingredients

  • 2 garlic cloves - crushed
  • 1/2 lemon - grated for zest and juiced
  • 2 tbsp capers - drained and rinsed
  • 6 anchovy fillets - drained
  • 2 tsp fresh thyme leaves - chopped
  • 1/4 tsp chilli flakes
  • 400g green olives - drained pitted & chopped
  • 100ml olive oil
  • Freshly ground black pepper

Preparation

Step 1

Prepare the garlic, lemon, fresh thyme leaves.

Put the garlic, juice, zest, capers, anchovies, thyme and chilli in a blender. Puree mixture. Then add the green olives and puree again until a paste is formed.

Pour in some oil and blend again. Continue to blend, pouring in the oil until the texture of the mixture changes and is smooth. Serve topped with fresh black pepper.

Goes well with salads, bread, sardines and can be used in other dishes as required
