Step 1
- "Knead" the foie gras with the Ratafia and add a turn of pepper.
- Slit the apricots, leaving each half still attached together, like a hinge.
- Fill the apricots with the foie gras using a piping bag.
- Dip the sides of the apricots with the foie gras in the the coarsely chopped pistachios.
- Keep cool in the fridge.
