Mexican Pasta bake with a nacho crumb

Ingredients

  • 1 small onion, chopped
  • 1 knob butter
  • 500g cooked spicy sausage
  • 1 sachet of taco or burrito seasoning
  • 100ml of water
  • 1 pinch cayenne pepper
  • 1 pinch chilli powder
  • 1/2 tub Philidelphia
  • 200ml soured cream
  • 200g penne pasta
  • 75g grated Mexican or Cheddar cheese
  • 75g Nachos Smashed up

Preparation

Step 1

Soften the onion in a frying pan with a small amount of butter until clear.

Step 2

Add the cooked sausage to the onions

Step 3

Add the taco/burrito seasoning with 100ml of water. Also add a touch of cayenne pepper and chilli powder.

Step 4

Mix in well. Add the Philadelphia and soured cream.

Step 5

Cook up the pasta, drain and add the spicy sausage mixture. Make sure all the pasta is coated

Step 6

Transfer the whole mixture to an ovenproof dish. Top with the crushed nacho's grated cheese

Step 7

Cover in foil and Bake in the oven at 200 C / Gas 6. Remove oven after 20 minutes, uncover and return to oven brown up the cheese and nacho topping

Step 8

Serve on it's own or with garlic bread and enjoy!

If after you add the sour cream and Philadelphia you find the mixture a bit thick you can add a little milk.
