Ingredients
- 500g butternut squash, peeled & diced into 1" cubes, 1 red onion (chopped), 1 red pepper (chopped), 4 tbsp olive oil, 1 pck cumberland sausages, 1 jar of tomato & rosemary sauce.

Preparation
Step 1
Preheat the oven to 200'C/Gas mark 7.
Step 2
Coat the squash and sausages in the oil and roast in the oven for 15 minutes.
Step 3
In a bowl, mix the paste with the onion and peppers.
Step 4
Then ass this mix to the squash and sausages and bake for a further 20 minutes.
Step 5
Serve Immediately.
Garnish with a sprig of rosemary.
