Step 1
Fry the lamb in a pressure cooker with about 3 tablespoons of olive oil, until golden brown. Add the bouquet of thyme, espellette pepper, salt and 30 ml water.
Close the cooker and steam cook slowly for 30 minutes. Allow the steam to escape, remove the lamb and set aside.
Remove the bunch of thyme, add the stock to the cooking juices to dilute and add the crushed garlic cloves.
Close the pot and simmer over low heat for 5 minutes.
Step 2
After this time, add the lamb again for 5 minutes and coat well with sauce when serving.
