Granny's homemade custard

Ingredients

  • 1 Vanilla pod
  • 1 pint double cream
  • 6 large egg yolks
  • 1 dessertspoon corn flour
  • 2oz golden caster sugar

Preparation

Step 1

Cut the vanilla pod lengthways and scoop out the seeds with end of a teaspoon. Then put the pod, the seeds and the cream into a saucepan.

Step 2

Put the pan on a low heat so it is just below the simmering point.

Step 3

While the cream heats, whisk the egg yolks, corn flour and sugar together.

Step 4

Then remove the vanilla pod from the saucepan.

Step 5

Whisk the egg mixture all the time with one hand, slowly pour the hot cream into the bowl.

Step 6

Then immediately return the whole mixture to the pan. Keep it on the low heat as you continue to whisk until it becomes smooth again as it simmers.

Step 7

If it looks grainy (because its been overheated) put it into a jug and whisk until smooth.

Step 8

Pour the custard into a jug and cover with Clingfilm until needed
