Apple & black pudding parcel on a sage potato cake

A delicious starter incorporating apples and pork, perfect combination!
Ingredients
- SAGE & POTATO CAKE
- 12 cups water
- 1 bunch kale
- 1 lb red potatoes,cubed
- 1 tbsp olive oil
- 1 tbsp butter
- 3 cups diced onion
- 2 tbsp chopped fresh sage
- 1/4 cup sliced scallions
- seasoning
- APPLE & BLACK PUDDING PARCEL
- 1/2 roll black pudding
- 1 tbsp oil
- 1 small onion
- 1 cooking apple
- 1 tbsp castor sugar
- filo pastry (defrosted)
- 1 egg for brushing

Preparation
Step 1
SAGE & POTATO CAKE
Boil the water & add the kale, cover & cook for about 5 mins. Remove the kale, saving back the cooking liquid. Chop the kale & leave aside.
Add the potatoes to the cooking liquid and bring to the boil, simmer until tender. drain the potatoes and roughly mash. Stir in the chopped kale and pinch of salt.
Pre heat the oven to 200*C
Heat the oil over a med heat in a heavy based pan.
Add the diced onion, chopped sage and a pinch of salt, cook gently until lightly browned.
Add the potato & kale mixture, scallions and a pinch of pepper. Combine together & then take off the heat to cool slightly.
divide the mixture into 8 portions & shape into 1/2 inch thick patties.
Place on a lightly greased baking sheet & bake for 20 mins.
Remove from the oven & grill until just browned.
Step 2
APPLE & BLACK PUDDING PARCEL
Oven set to 200*C
Core, peel & chop the apple.
Stew the apple with the castor sugar in a saucepan & a splash of water until it softens but still has bite.
Take off the heat & allow to cool.
Peel & finely chop the onion.
Heat the oil, slice the black pudding & fry gently on one side.
Turn the pudding over, add the onion & fry until the pudding is cooked.
Remove from the pan & mash onion & black pudding in a bowl roughly with a fork.
Lay out the filo pastry & cut into 8 squares.
Place a spoon of apple in the middle of each square & top with a mound of the black pudding mix.
Beat the egg & brush the edges of the pastry to wet the edges.
Pull the four corners up to meet & pinch together with a little twist.
Place the parcels on a greased baking sheet & brush the parcels with egg.
cook for 20 mins or until a nice golden colour
(the parcels & patties are cooked at the same time)
Once cooked, serve two potato cakes, topped with two parcels.
Drizzle the plate with a balsamic reduction & a little tomato concasse for added colour, finishing the dish with a sprig of fresh sage.
