A very easy salad, you just need a bit of patience to roast the beetroot.

- 6 beetroot
- 1 red onion
- 4 radishes
- 50g goats cheese
- 3tbsp lentils (cooked)
- Olive Oil
- Balsamic vinegar
- Salt and pepper

Preparation
Step 1
Roast the beetroot in a tray with a little salt, pepper, water and olive oil in an oven at around 200 degrees celsius for an hour.
Step 2
Once cooked, peel and cut into large chunks. Toss the beetroot in the olive oil and add the balsamic vinegar to taste.
Step 3
Chop the onion, radishes and add them to the mix with the lentils, then sprinkle the cheese on top to finish.
