Veal Chops with Lemon

  • 6 veal chops
  • 75 g butter
  • salt, pepper, lemon
  • 2 pieces of sugar
  • 15 cl Bordeaux Entre-Deux-Mers wine
  • chopped parsley

Preparation

Step 1

Fry the chops in some melted butter. Add salt and pepper. Turn them over halfway through cooking.

Step 2

Prepare the lemon zests and boil 30 seconds in boiling water.

Step 3

Put sugar in a saucepan with 15-20 ounces of water. Add the blanched zest. Reduce all.

Step 4

Deglaze pan of veal chops after cooking with white Bordeaux, and the lemon juice. Add the caramelised zests and the remaining butter.

Step 5

Serve the ribs with chopped parsley to add some extra flavour.
