Salad of green beans and quinoa with tomatoes and coriander

Preparation

Step 1

Cook the quinoa in twice it's volume of water with salt. When cooked, cool and drizzle with olive oil.
Drain the green beans.

Step 2

In a pan, brown the pine nuts without adding fat for a few minutes, stirring constantly to get an even colour. Drain on kitchen roll and season with salt. Peel and chop the garlic. Wash, dry and pick off the coriander leaves, then chop. Cut the tomatoes into small dice. Put all these ingredients in a bowl, add the quinoa and toss gently.

Step 3

In a bowl, mix the lemon juice, a drizzle of olive oil and season with salt and pepper. Pour over the quinoa as a salad dressing.

Step 4

In a bowl, place the quinoa in the centre, place the beans on top and sprinkle with pine nuts.
