Preparation
Step 1
Remove the zest from the lemon with a peeler, then blanch a few minutes, chop and set aside.
Step 2
Prepare the peppers:
Wash, remove seeds, cut into small pieces.
Saute chopped onion, add chicken pieces, peppers, leave to brown a few moments.
Step 3
Add a good spoonful of curry paste and a carton of coconut milk. Add a little water if necessary, the lemon juice and the chopped zest. Simmer gently, covered, until the chicken is cooked.
Step 4
You can sprinkle with fresh coriander or parsley just before serving. Serve with Thai rice, or noodles.
