Pork goulash with peppers

Preparation

Step 1

Preheat the oven to 180 ° C. Choose a po with a lid and heat it over medium heat. Place the pork in the bottom of the casserole, season with salt and pepper, pour a heavy dash of olive oil. Cook for 15 min. Then take out the pork and set aside.

Step 2

Add the onions to the casserole, the finely chopped chilli peppers, having removed the seeds, the paprika, a big pinch of salt and pepper. Reduce the heat, cook for 10 minutes then add the diced peppers, chopped jarred peppers and tomatoes. Return the pork to the casserole. Mix well and pour just enough water to cover meat. Add vinegar and cook for 3 hours. The meat will be perfect when it breaks up very easily.

Step 3

When the meat is ready to serve, cook the rice. In a bowl, mix the cream, lemon zest and most of the parsley. Remove the meat from the casserole and shred it coarsely. Pour into the bowls with the sauce and a good spoonful of lemon cream on top. Add a little parsley on top and serve with rice.
