Step 1
Put the mustard in a bowl, add the balsamic vinegar, mix well.
Add a good pinch of sea salt.
Finely crush the garlic and add to the mustard.
Take the most creamy part (about a third) of the portion of roquefort and mix with the mustard. Add 250 ml of sour cream (or plain yogurt). Mix well. Add 1 tsp. of vinegar (tarragon or chive). Mix well.
Step 2
Stir in the remaining roquefort, cut into pieces and mix well.
Your dressing is now ready. Pour 2 tablespoons of dressing over a portion of lettuce person and sprinkle with pecans and berries.
Add freshly ground pepper on top.
