Cauliflower and potato patties with blue cheese

Preparation
Step 1
Wash the cauliflower and cut into 2 bunches. Cook in boiling salted water for about ten minutes (the cauliflower should be cooked but still slightly firm under your fork).
Step 2
Peel the potatoes and cut into small pieces, cook in boiling salted water until just tender. With a fork, mash the cauliflower and potatoes with the blue cheese.
Step 3
Add the lightly beaten egg and ground almonds. Adjust the seasoning to taste.
Step 4
Form patties or balls and dip them in rice flour.
Step 5
Over medium heat, heat the butter and oil in a pan and gently cook the patties one side until golden. Turn them gently with a spatula and brown the other side.
Step 6
Serve with a salad with a drizzle of hazelnut oil.
