- 2 1/4 cups digestive crumbs
- 1/2 cup sugar
- 1/2 cup melted butter

- 1 cup sugar
- 2 1/2 (8-ounce) packages cream cheese, at room temperature (560g)
- 1 1/2 teaspoons vanilla extract
- 1 vanilla bean, seeds scraped from inside of pod and reserved
- 3 tablespoons all-purpose flour

- 1 cup sour cream
- 8 ounces melted semisweet chocolate, cooled slightly (225g)
