Pulled pork sandwich with slaw
Ingredients
- For the sandwich:
- 1kg boneless pork shoulder with thick fat removed
- 30 ml olive oil
- 2 tbsp spanish paprika
- 2tbsp mustard powder
- 1 bsp garlic
- 1 tbsp onion salt
- 150ml vegetable stock8 large soft white rolls
- For the slaw:
- 4tbsp mayonnaise
- 15ml cider vinegar
- 2tbsp mustard seeds
- 2tbsp poppy seeds
- 1/4 white cabbage, shredded
- 1/4 red cabbage, shredded
- 1 small onion, finely chopped

Preparation
Step 1
Preheat oven to 150C
Step 2
Rub the pork with 2tbsp of the oil
Step 3
Heat a pan until very hot and sear the meat on all sides and place in a baking tin
Step 4
Sprinkle over and rub in the paprika, mustard powder, garlic and onion salt, and some pepper
Step 5
Pour in the stock, cover and cook for 4hrs, then check progress
Step 6
The meat should fall apart easily, if not give it another 20 mins. Flake the meat apart with two forks
Step 7
In a medium mixing bowl, combine the mayonnaise, cider vinegar, mustard and poppy seeds, salt and pepper. Add the cabbage and onion and mix well
Step 8
When ready to serve scoop the meat into the rolls with a dollop of the coleslaw on top
You can do it in a slow cooker but brown it first in the pan
