- 100g Sugar
- 1 heaped teaspoon Golden Syrup or Honey
- 1 teaspoon Bicarbonate of soda

Preparation
Step 1
Pour the sugar into the saucepan and drizzle golden syrup or honey on top. Place the saucepan on the lowest heat possible ans stir it with a fork. It will take around 10 minutes to reach the stage requierd at 160 degrees Celcius and should change from yellow to brown.
Step 2
To test if it is ready dip the end of the teaspoon in the syrup then into the cold water to set it. You might hear the sugar crack as it cools rapidly which indicates it's hot enough. It is best to move it off the heat while you check.
Step 3
Take it off the heat when it's ready and then quickly add the teaspoon of bicarbonate of soda into the syrup. Then, whisk the mix with the fork thoroughly. Pour it out on a try lined with greese-proof paper.
Now leave it to cool for an hour.
