Gooey caramel chocolate cookies

Yummy chocolate cookies with a soft and gooey caramel centre
Ingredients
- 225g Soft brown sugar
- 2 tbsp Golden syrup
- 1/2 tsp vanilla
- 113g Margarine
- 282g Plain flour
- 57g Cocoa powder
- 1/4 tsp salt
- 1/2 tsp Bicarbonate of Soda
- 225g Lotus caramelised spread
- 57g Icing sugar

Preparation
Step 1
In a large bowl cream together the sugar and margarine
Step 2
Add the vanilla and syrup
Step 3
Sift in the flour, cocoa powder, bicarbonate of soda and mix together to make a stiff dough
Step 4
Make the filling:
Mix together the icing sugar and lotus spread in a separate bowl
Step 5
place a tsbp of chocolate dough onto a floured counter, pat into a small round
Step 6
Put a tsp of the filling on top of the centre if the round then bring up the sides to form a chocolate ball (make sure there are no gaps)
Step 7
Place on the baking tray and flatten very slightly
Step 8
Bake for 10 mins on Gas mark 4 (180c)
Step 9
Remove from the oven and place on a wire rack to cool
Step 10
Enjoy the cookies. Once the caramel has set the cookies can be placed in a microwave for 10 secs to make the centre gooey again
Can add chocolate chips if you choose or crushed rice crispies to the filling for a crunch
