Ingredients
- 3 Carrots, cut into slices
- 1 Leek, sliced
- 1/2 onion, chopped
- 1 Parsnip
- 1 Celery
- 1 garlic clove, chopped
- 2 Small Potatoes
- Salt and ground black pepper
- 2 tbsp butter
- 2 cups of vegetable stock
- 1 tbsp of flat leaf parsely
- For Cheesy Croutons
- 1 Loaf of French Bread
- 3 tbsp olive oil
- (1/2 cup) Parmesan or Gruyere cheese grated

Preparation
Step 1
Melt butter in saucepan and add garlic and leak saute for a few minutes
Add 2 cups of stock, add carrots, potatoes, parsnip, celery.
Bring to boil and simmer for 20 minutes
Step 2
Use handblender, add parsley & cream
You can use all leftover vegetables in your fridge
