  • cut into slices
  • 1 Leek
  • sliced
  • 1/2 onion
  • chopped
  • 1 Parsnip
  • 1 Celery
  • 1 garlic clove
  • chopped
  • 2 Small Potatoes
  • Salt and ground black pepper
  • 2 tbsp butter
  • 2 cups of vegetable stock
  • 1 tbsp of flat leaf parsely
  • For Cheesy Croutons
  • 1 Loaf of French Bread
  • 3 tbsp olive oil
  • (1/2 cup) Parmesan or Gruyere cheese grated

Step 1

Melt butter in saucepan and add garlic and leak saute for a few minutes
Add 2 cups of stock, add carrots, potatoes, parsnip, celery.
Bring to boil and simmer for 20 minutes

Use handblender, add parsley & cream
