Pan Fried Salmon with Asparagus


This is a delicious meal which I often cook for for my family. I'm sorry I haven't got a photo as I only just found the competition. if I am shortlisted I will prepare it soon and send you a photo.

Step 1

Mix equal quantities of ginger, honey, soy sauce and coriander, (say 2oz each) into a paste and marinade 4 salmon steaks in this mixture for a few minutes.Remove stem ends from a bunch of asparagus and place in a steamer pan or saucepan.

Step 2

Prepare a bowl of couscous.

Step 3

Pan fry salmon until fully Pan fry salmon until fully cooked through and heat the remainder of the sauce in a small saucepan. Boil or steam asparagus for 5 minutes and add butter to it and raisins to the couscous.

Step 4

Serve salmon with sauce, couscous and asparagus for a delightful dinner.

Make sue the salmon is well cooked. If it is very thick you can put it in the oven for 15 minutes first.
