- 3 rashers of bacon
- small can of onion soup or french onion soup

Step 1
Peel the potatoes, cut them in half and boil until cooked.
Step 2
While the potatoes are boiling, chop the bacon into small squares and add to a frying pan with a little olive oil. Fry until cooked. Add the can of soup and heat slowly.
Step 3
When the potatoes have cooked, drain them and put them on a plate. Slice into 2 cm slices and arrange in a dish. Sprinkle with black pepper. Pour the soup and bacon mixture onto the potatoes evenly. Grate the cheese over the top and add fresh, chopped parsley evenly. Place the dish in a medium grill until the cheese has melted and is golden brown.
You can use left over potatoes but you will need to heat them in a microwave first. You can also add mushrooms, peppers etc. if you need to use them up.
