Ingredients

  • Thin sliced bacon rashers
  • Dark Choclate
  • 2 cups all purpose flour
  • 3/4 cup cocoa powder
  • 2 cups sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1 cup cold strong black tea
  • 1/2 cup oil

Preparation

Step 1

Flatten your bacon as thin as possible with a mallet or tenderiser, sprinkle with salt and place into an oven at 200 to bake until crisp and dry. Drain the oil and coat in honey and leave to cool

Step 2

Mix the flour, cocoa powder, sugar, baking powder and salt, crack in the eggs and pour the tea, milk and oil. Whisk to blend before crumbling 3/4 of the bacon and loosely chopped dark chocolate chunks into the mixture and stirring until evenly distributed.

Spoon evenly into cupcake moulds.

Step 3

Bake at 190 degrees for 20-25 minutes in a preheated oven, once springy and firm leave to cool before melting dark chocolate over the surface and speckling with broken pieces of honey glazed bacon.

Sugar coat the decorative bacon on the surface for a candy glaze, and feel free to chunk some chocolate chips into the surface too.

A slight hint of chilli in the surface chocolate can add some interest, try sprinkling a little paprika and icing sugar on the surface for some colour and bite.
