Ingredients
- 3 lb potatoes, scrubbed and cut in halves
- 1 gallon water
- 2 sliced lemons
- rind (sliced) and juice of 4 oranges
- 3 lb sugar
- 1 oz yeast

Preparation
Step 1
Boil potatoes in the water for a good ten minutes.
Step 2
Strain over the peel and return liquor to pot and boil for half an hour.
Step 3
Strain over the sugar and stir until dissolved.
Step 4
When blood heat add yeast and leave to work for eight or ten days, after which bottle and cork lightly.
Consume in moderation. It has been known for two glasses of potato wine to put a person under the table - but I'm not sure which recipe was used!
