This is another recipe for the slow cooker and is mild enough for all the family

Ingredients

  • 6 tbsp Vegetable Oil
  • 4 large Chopped Onions
  • 2 crushed clove garlic
  • 5 tsp Curry Powder
  • 500g Lentils
  • 2 litres of Vegetable Stock
  • 2 tsp Lemon Juice (optional)
  • 4 diced Carrots
  • 2 Diced Apples
  • 125g Sultanas
  • Salt & Pepper to taste

Preparation

Step 1

Heat the oil in the pan. Saute the onion, carrots and garlic lightly.

Step 2

Add the curry powder and cook gently for 1 minute.

Step 3

Stir in the stock, lemon juice, salt, pepper and Lentils bring to boil simmer for 3 minutes.

Step 4

Transfer to your slow cooker for 3-5 hours on the low setting.

You can add any vegatables that you wish to this recipe this is just what me and my kids love.

If you don't have a slow cooker then gently boil in a cover pot for a hour, add stock in small amounts if needed.
