Nutmeg pumpkin chutney

-Cut the pumpkin flesh into small cubes (0.5 by 0.5 cm). Sprinkle a little salt, stir and leave to drain overnight in the fridge. -Cut the apple into small dice (4 mm by 4 mm).
-Chop the ginger and grind some pepper and place in a small towel and tie up (to infuse during the cooking).
-Place all ingredients in a pot, add a glass of water and simmer for 1 hour.
-Cook until all the liquid evaporates and then put into a jar!
