Poached figs in liqorice juice with iced apple compote
Ingredients
- 1kg figs
- 1 l red wine
- 5cl kirch
- 100g sugar
- 1 vanilla bean
- 2 liquorice sticks
- 2 anises
- 1 orange
- 1 tsp corn flour
- 2 tbls water
- 4 golden apples
- 400g water
- 50g sugar
- 2 lemons

Preparation
Step 1
Cook the red wine, the orange juice and zests, liquorice sticks and all the spices for 20 minutes. Drain and leave to reduce to half.
Step 2
Add the fresh figs and cook for 3 minutes. Add the corn flour melted in 2 tbls of water, boil and remove from heat. Leave to cool in the freezer, for as long as you can, or in the fridge over night.
Step 3
Peel the apples and dice them. Cook them in 400g of water, 50g of sugar, the lemon juice and zests fro 15 minutes. Once you obtain a smooth compote, place in the freezer over night.
Step 4
Serve the poached figs in soup plates, with liquorice sticks, the fresh juice and the grated iced apple compotes.
