Preparation

Step 1

Collect the juice of the passion fruits, about 3 tbsp.

Step 2

Stir the yeast into the flour, or use self-raising flour.

Step 3

Beat the eggs and sugar.

Step 4

Add in order, whisking with each addition, the fromage blanc (or cottage cheese), the melted butter, then the flour.

Step 5

Pour in the passion fruit juice, then gently fold in the raspberries.

Step 6

Pour into a buttered loaf tin.

Step 7

Bake in a hot oven at 180 degrees for about 35 minutes, check for doneness.
