Preparation
Step 1
Mix together the egg yolks, sugar and white wine then put the mixture in a container in a bain marie at 70 °.
Step 2
Whisk for 10 to 15 minutes until the mixture turns into a warm fluffy mousse. The mixture must become thick, stick to the whisk and fall slowly back into the bowl.
