Peel the bananas.
Slice each banana into sections.
Pour over with rum and leave to soak.
Prepare the batter with the flour, baking powder, sugar, egg and milk and reserve for one hour.
Flavour it with the lemon zest.
Coat the banana pieces in the batter and dip a few minutes in a frying pan full of oil until well browned.
