Risotto with smoked salmon

Step 1

Heat the olive oil and fry the chopped onion over medium heat. Add the rice, stir well to make it translucent. Pour a ladleful of vegetable stock, stir and add another ladleful once all the liquid has completely evaporated. Continue until the rice is cooked (about 20 min) and all the vegetable stock has evaporated.

Step 2

Cut the salmon into small cubes. Mix into the risotto. Add the cream and Parmesan. It's ready!
