  • Low calorie spray oil
  • 1 large onion
  • 1 pepper
  • 500g extra lean mince
  • 400g tin chopped tomatoes
  • 410g can kidney beans
  • 1 beef stock cube
  • 1/4 pint (150ml) boiling water
  • 3 tablespoons tomato purée
  • 3 teaspoons chilli powder
  • 1 teaspoon paprika
  • Optional- deseeded and chopped red chilli or dried chilli flakes for extra spice

Step 1

Heat oil, add onion and peppers (add fresh chilli if using) and fry until softened

Step 2

Add mince, stirring until broken up until browned

Step 3

Add tomatoes, kidney beans, stock, purée, chilli powder (and dried chilli flakes if using)

Step 4

Stir, bring to the boil and simmer for 20-30 minutes until a thick and rich sauce has formed.

Serve with rice and tortillas, or in a baked potato topped with sour cream.
