Step 1
Cut persimmons into large segments.
Step 2
Cut into small dice all the vegetables, olives and chives, put in a large mixing bowl, add the breadcrumbs, salt and pepper. Top with 2 tablespoons of olive oil and a few drops of sherry vinegar. Mix well.
Step 3
Place the segments of persimmons in the bowl to coat completely and place them on the plates.
