Salmon mousse with herbs

Step 1

Remove any excess water from the fromage blanc or cottage cheese. Place a clove of garlic, a shallot, a pinch of paprika and 10 stems of chives and 6 of dill in the blender and chop finely.

Step 2

Bake the fresh salmon for 10 to 12 minutes in a preheated oven at 180 °. Place it in the bowl of a blender, add half the smoked salmon and mix everything very finely.

Step 3

Mix in a bowl the egg yolk, lemon juice, a tablespoon of olive oil and cottage cheese until the mixture is well blended. Add the garlic, dill, shallots, paprika and chives. Add the pureed salmon. Salt and pepper to taste. Pour it all in a cake tin, previously lined with the remaining slices of smoked salmon. Refrigerate for 2 hours. Serve in slices (1cm thick).
