Lamb tajine with Jerusalem artichokes

In a bowl, marinate the meat in the spices and coriander juice for an hour.
In a pot, put some oil and sweat the onion and garlic over low heat for 5 minutes. Add the meat with its marinade and cook for 10 minutes. Moisten with water and cook over medium heat (by adding a little water if necessary). When the meat is cooked, remove from the pot and add the artichokes, peeled and washed and the bunch of coriander. When the vegetables are tender, add the lemon juice and the fresh lemon, peeled and cut into rings.
Return the meat to pot to heat, allow the sauce to thicken. Remove the bouquet of coriander, serve the meat garnished with artichoke, and topped with sauce.
