  • 2 thyme sprigs
  • finely chopped
  • 3 Garlic cloves

  • 3tbsp olive oil
  • 2.5kg (5lb) beef bone in carvery rib
  • 2 shallots
  • finely chopped
  • 1tsp plain flour
  • 200ml (7oz) red wine

Preheat oven to 190oC

  • 500ml milk
  • 20g Porcini mushrooms (dried)
  • 40g butter
  • 25g plain flour
  • 100g pappardelle
  • 50g pancetta (cut into 2cm pieces)
  • 4-5 tablespoons grated parmesan
  • Salt and pepper
