Summery Gazpacho

Raw veg can be a bit blah if you're eating them on their own but blitz a few up together and hey presto - gazpacho!...
- 900g tomatoes (about 6)
- 1 red pepper
- ΒΌ cucumber, skin removed
- 1 clove of garlic, minced
- 1 inch piece of ginger, minced
- 1 small handful of coriander, minced
- 2 tablespoons white wine vinegar
- 1 teaspoon soy sauce
- Ground black pepper, to taste
Gramps' Truffles

Many years ago when I was in elementary school in South Dakota we had to come up with a business idea
- 175grams (6 oz) of biscuit crumbs. I used Tesco's cheapest own brand digestive biscuits. Either put them in a food processor to reduce them to crumbs, or simply cover them with baking paper and use a rolling in to crush them.
- 30grams (1 or 2 ounces) of raisins, chopped small. Again, a food processor with blade if you have one. Otherwise a knife on a board.
- 40g (1.5 ounces) hazlenuts, finely chopped. A coffee grinder or blender does this well.
- 50g (2 ounces) ground almonds. Tesco's will have this in stock in the baking section.
- 50g (2 ounces) blackcurrent jam.
- 15ml (one good teaspoon) of brandy. If you have no brandy (cognac) use rum.
- Coating = about half a pound (250g++) of cooking chocolate. Tesco's sell their own brand of rich 72% cocoa solids chocolate, which is better than milk choc for this job, if you don't like cooking chocolate.
Asian Style Noodle Soup

- 500g chicken stock
- 150g straight to wok medium noodles
- 150g silken tofu
- 4 bok choy leaves and stalks
- 3 medium shiitake mushrooms
- 3 baby corn
- 1 red chilli
- 1 piece of ginger, about the size of your thumb
- 1 clove garlic
Easy Ham & Veggie Fried Rice

This is such a quick an easy dish and can be made using leftovers
- 250g day old rice
- 2 medium eggs
- 1 tablespoon fish sauce
- 1/2 tablespoon mirin
- 1/2 tablespoon sesame oil
- A handful of finely diced or pulled ham
- Vegetables of your choice. I used:
- 1/2 courgette, diced
- 3 shiitake mushrooms
- 5 bok choy leaves
- 3 ears of baby corn
- 4 snap peas
- 8 chives
Healthy Seaweed Salad

- A small handful of your favourite dried seaweed
- 1 medium spring onion or clove of garlic
- 1 1/2 teaspoons sesame oil
- 1 1/2 teaspoons black sesame seeds

Lemon & Lime Black Sesame Mini Loaves

- 200g caster sugar
- 300g plain flour
- 1 tablespoon baking powder
- 1 1/2 tablespoon black sesame seeds (or poppy seeds)
- 3 medium eggs
- 260ml milk
- 240g extra virgin olive oil
- 1 1/2 lemons - zest and juice
- 1 lime
Pork & Seaweed Gyoza

- Gyoza Wrap
- 1 cup plain flour
- 1/4 cup boiling water (add a little more bit by bit if needed)

- 1 teaspoon finely diced or grated ginger
- 2 stems of spring onion, halved lengthways and sliced
- 4 water chestnuts, finely chopped
- 1/2 cup seaweed
- Dipping Sauce
- 1 tablespoon soy sauce
- 1 teaspoon sweet chilli sauce
- 1/2 teaspoon sesame oil
