  • 250g of appenzeller
  • 500g of compté
  • 1 large glass of Gewürztraminer (or any white wine)
  • half glass of calvados liqueur
  • 2g of nutmeg
  • stale bread cut into small pieces for dipping in your fondue when the latter will be hot

Preheat the oven to 200°C

  • For the pastry: (with a dough mixer)
  • 50g butter (to lighten the batter) otherwise 75gr
  • 150g flour
  • 1/2 teaspoon salt
  • 50g of warm water
  • For the filling:
  • 1.2 kg fresh spinach
  • 45g grated Comté
  • 45g grated Beaufort
  • 4 tbsp creme fraiche or soya cream
  • 3 eggs
  • Salt and pepper
  • A pinch of nutmeg
