Put a great twist on the all-time favourite biscuit snack, with these dark chocolate chip cookies - so decadent and gooey!
Ingredients
- 225g unsalted butter at room temperature
- 350g soft light brown sugar
- 2 eggs
- 0.5 of a teaspoon of vanilla extract
- 400g plain flour
- 0.5 of a teaspoon of salt
- 2.5 teaspoons of bicarbonate of soda
- 225g dark chocolate roughly chopped

Step 1
Preheat the oven to 170°C (325f) gas 3
Step 2
Put the butter and sugar in a freestanding electric mixer with a paddle attachment or use a handheld whisk and cream until light and fluffy.
Add the eggs, one at a time, mixing well and scraping any unmixed ingredients from the side of the bowl with a rubber spatula.
Turn the mixer down to slow speed and beat in the vanilla extract.
Step 3
Add the flour and bicarbonate of soda and mix well until a smooth dough is formed.
Stir in the chopped dark chocolate until evenly dispersed.
Step 4
Arrange 6 equal amounts of cookie dough on each of the four prepared baking trays.
Make sure the cookies are spaced apart to allow spreading while baking.
Once baked, leave on a wire cooling rack for 2 minutes.
