  • 2 eggs
  • 1 tp vanilla extract
  • 120ml oil
  • 60ml coffee/water
  • 120ml butter milk (milk+lemon juice/vinegar)
  • 225g self-raising flour
  • 200g brown sugar
  • 25g unsweetened cocoa powder
  • 1 tp baking powder
  • 1/2 tp baking soda
  • 1/4 tp salt
  • 1 cup chopped nuts (optional)
  • 1 cup chocolate chips (optional)

Step 1

Preheat oven to 190oC. Greese muffin tin with butter.

Step 2

Whisk the eggs. Add vanilla extract and oil and mix well.

Step 3

Add coffee/water and butter milk and mix well.

Step 4

In another bowl, add in sifted flour, sifted brown sugar, sifter unsweetened cocoa powder, baking powder, baking soda and salt. Mix well.

Step 5

Add in chopped nuts and chocolate chips.

Step 6

Add the wet ingredients to the dry ingredients and mix well.

Step 7

Using 2 spoons, 3/4 filled the muffin tins with the batter.

Step 8

Bake for15-25min.

Step 9

Cool for 15min before serving.
