Pistachio macarons

Ingredients
- For the macaron
- 160g icing sugar
- 100g ground almonds
- 60g ground pistachios
- 4 medium egg whites,separated into two egual batches
- 160g caster sugar
- few drops of green food colouring
- For the pistachio buttercream
- 100g unsalted butter, very soft
- 3 tbsp caster sugar
- 1 tsp vanilla extract
- 50g ground pistachios
- green food colouring

Preparation
Step 1
For the macarons
line 3 baking sheets with baking paper
sieve together the icing sugar, ground almonds and ground pistachios into a large bowl
add 1 batch of unbeaten egg whites
add the food colouring
mix to make a thick paste
make it darker than you want it as more egg white later will lighten it
set aside
pour the second batch of egg whites into a heatproof bowl
in a small saucepan, add 50ml of water and the caster sugar and heat on a med heat
bring to the boil up to the point of 110*c
beat the egg whites at high speed
once the syrup meets 120*c, pour very slowly into the egg whites, continuing to whisk
whisk until it cools slightly and is slightly peaky
tip the meringue into the almond mixture and gently fold together making sure not to over beat it
heat the oven to 170*c
transfer the batter into a piping bag with a plain nozzle
pipe rounds onto the baking sheets and leave to settle for about 30mins or until the macarons have developed a slight skin
bake for 15 mins but keep an eye on them
remove from the oven and slide the paper onto a work surface to coolfor a few mins before removing from the paper fully
Step 2
For the buttercream
whip the butter and vanilla in a mixer until soft
gradually add in the caster sugar until smooth and creamy
add the food colouring and stir in the ground pistachios
Step 3
transfer the buttercream to a piping bag and using a small nozzle, pipe onto one macaron then sandwich together with another
