Ingredients
- Spring risotto, cooled
- 125 g mozzarella, torn into 16 pieces
- 3 tbsp olive oil
- 100 g golden breadcrumbs

Preparation
Step 1
Preheat oven to 190 C.
Step 2
Brush oil over 2 baking trays. Wet your hands, divide risotto into 16 small balls. Poke a piece of cheese into middle of each ball.
Step 3
Place breadcrumbs into bowl. Roll balls in breadcrumbs, place on tray. Bake 15 mins, turning once.
